Herb fennel and Florence fennel

There are two broad camps. Herb (or common) fennel is grown for its aromatic leaves and seeds, while Florence fennel — finocchio — forms the crisp, bulbous base loved in Mediterranean cooking. Both are aromatic to the core, sitting comfortably among our aromatic herbs, and as a hardy plant herb fennel returns reliably as one of our perennial herbs.

Growing fennel from seed

Fennel dislikes root disturbance, so sow it where it is to grow once the soil has warmed, thinning seedlings to give each plant room. Keep it watered through dry spells to stop bulbs bolting, and give it full sun for the best flavour. Its tall, airy flower umbels are a magnet for hoverflies and bees, making it as useful to the garden as to the kitchen.
